The Princess Bride question IS answered in the novel. Humperdinck chooses Buttercup almost arbitrarily though, but there is a whole chapter devoted to it. Goldman didn't include it in the movie because he basically cuts out the entire first half of it to get to the action. And honestly, if you heard the reason, it really doesn't change much.
